Or when you fry fish or tofu, the result is a heartbreaking mess.

In that process, aside from some technical details that weren’t handled quite right, the pan itself does play a part.
Today, let’s talk about cookware. The material, the thickness, and the way it behaves during cooking all affect the final result.

I. The Core Secret of Pans: Heat Capacity
A pan is essentially a heat storage device.
You heat it up, it stores heat. You put food in, and heat transfers from the pan to the food. The pan’s temperature drops. How much it drops depends on how much heat it can store.
That “ability to store heat” is called heat capacity.
A pan with high heat capacity (a thick pan) stays stable once heated; when food goes in, the temperature doesn’t crash. A pan with low heat capacity (a thin pan) loses temperature the moment the heat is turned off; when food goes in, the temperature collapses instantly.

A carbon steel wok is a thin pan. Its logic is not “storing heat” but “speed.” High flame, the pan heats fast; ingredients go in, you toss quickly; the ingredients spend little time in the pan, so you don’t need huge heat storage. The thin pan’s lightness lets you toss; its quick cooling lets you control the heat—when the ingredients leave the flame, they cool down immediately and don’t overcook.

So:

  • Thick pans: best for “searing, braising, roasting”—dishes that need stable high heat and long heat retention.

  • 30cm tri-ply stainless steel frying pan: your workhorse. Searing, stir-frying, braising, roasting—one pan for everything.

  • 25cm cast iron skillet: for steaks, chicken skin, cornbread.

  • 25cm non-stick pan: for eggs, pancakes, sticky-prone dishes. Mid-range is fine; don’t overspend.

  • 2.5L sauce pan: for sauces, hot soups, small braises.

  • 30–35cm carbon steel wok: for stir-frying, deep-frying, steaming, smoking. The soul of Chinese cooking.

  • 6–7L enameled cast iron Dutch oven: for braised meat, soups, red-braised dishes. A one-and-done purchase that can last a lifetime.

  • 12–15L large stockpot: for pasta, stock, blanching. Buy the cheapest one.

  • Baking sheet: for roasting meat and vegetables. Get a shallow one with a cooling rack.

V. Special Section: The Chinese Wok—Choosing and Seasoning
If you can only have one pan, I’d say go with the versatile Chinese wok. It has its downsides, but all things considered, it offers the best value.

How to choose a wok:

  • Material: carbon steel—not stainless steel (sticks), not cast iron (too heavy). Carbon steel is best.

  • Thickness: at least 2mm. Press the rim; it shouldn’t bend.
