• Yellow onions – 4
• Unsalted butter – 50g
• Bread – 2 slices
• Gruyère cheese – 100g
• White wine – 100ml
• Beef stock – 1L
• Thyme – 2 sprigs

• Salt and pepper – to taste

Method:
Cut the onions in half, then slice thinly.
Melt the butter in a pot and cook the onions over low heat for about 40 minutes, until they turn a deep golden colour.
